yes color bulbs will reduce the amount of light and intensity if you don't have a dimmer to control aggression.

I also see the word "intensity" mentioned often. What does that exactly mean? Is there a way to quantify intensity or is it just something you know after year's of experience?

Yes - birds see the red spectrum of light differently than we do. It's been my experience it will keep them calmer (along with lower intensity).
